Apologies

I'm horrible at this blogging thing. I always think of tons of things to post about..and then just never get around to it.

We never got around to any Thanksgiving crafts, I just wasn't feeling it. Thankfully D is only 2, so he doesn't know lol. We had a great Thanksgiving tho. Tons of food, lots of laughter. Mom got the Pie Face game, so we had a blast with that. I got all the leftover turkey bones, and I'm currently cooking down some stock in the crock pot. It smells amazing! I also had some leftover cranberries from the Sangria I made *it was DELICIOUS! and I'm still drinking on it*, I just cooked them down a little and tossed them into the dehydrator to make craisins. * I used 7 oz cranberries, 1/4 cup water and 1/2 cup sugar and cooked on medium high about 10 minutes, until they all "popped", drained and placed on tray. I did put them on the leather tray* I also poured the cooking liquid into the dehydrator to see if I could make fruit leather with it. I had some apples that were starting to look a little rough so I cut those up and tossed them in to dry as well. *Sorry but it all got eaten and I never took pictures lol*

I'll be making a few batches of waffles for the freezer, as well as donuts sometime this week too. I love that mom has all these gadgets *dehydrator, waffle maker and donut pan are all hers* so I can borrow them since I don't have room in this tiny apartment to store stuff like that.

I just threw together a test batch of donuts, and I'll post the recipe either later today, or sometime tomorrow.
Donuts with Vanilla Glaze

A few nights ago I made Beef Enchiladas for dinner. Scott has always said he doesn't like enchiladas, or tamales and we finally realized its because he doesn't like the red sauce, so I found Green Enchilada sauce, and he loves it. He got home late from work, and I had just pulled them out of the oven. He devoured the rest of the pan!


Enchiladas :
2 cans green enchilada sauce *or red* (In my mom's case, you could also just top with queso!)
2 cups beef broth
salt and pepper to taste
1 tablespoon flour
1 tablespoon oil

1 lb ground beef (or sliced steak, chicken, shrimp, any meat or even no meat!)
1 small onion, diced small
lg can green chilies
1 tsp salt
Next time I will add in a tablespoon or so of taco seasoning.
shredded cheese  (You could also just use a liquid queso)
*You could also use beans, green onions, peppers*

corn tortillas *I didn't count how many I used...just grabbed and it happened to be 1 to many for my 9x9 pan* From the picture I think it looks like 9 tortillas.
1/2 cup oil for frying



Tons of shredded cheese for topping.

Optional toppings : green onions, avocado, sour cream, hot sauce.

Make a light roux with your oil and flour. Add in sauce, broth and seasonings. Simmer for about 20 minutes while you get all the other steps ready.

Saute onions, toss in ground beef and brown. Add in green chilies and seasoning. Set aside while you get your tortillas ready.

Heat up your 1/2 cup oil in a small skillet. Fry the tortillas on each side, just til soft. About 30 seconds a side. I left mine in a little too long and some got soggy. You don't want soggy enchiladas!
Let drain.

Heat oven to 350*. Put a little sauce in the bottom of your baking dish.
Dip each tortilla into the sauce, lay flat and top with meat, cheese. Roll up and place in baking dish. The tighter they fit into your pan, the better they will hold together. Top with sauce, and TONS of cheese.

Cook about 20 minutes or until bubbly and lightly browned. Serve with toppings of your choice.
